You don’t know what to eat because you have one heckuva complex health picture.

You’ve been given a lot of conflicting advice: stop eating carbohydrates and eat Paleo, Autoimmune Paleo, Keto, eat more fats. OR you’ll be told to eat more carbohydrates. Go vegan. Eat only raw foods and juices. Do a “cleanse” of some kind – usually involving juices. Do an elimination diet. Take expensive supplements and only eat soup. Eat within a 4 hour window each day.

You don’t know what to do, nothing makes sense.

You don’t know what to eat, or what to cook.

So you pick a diet at random, or based on another person’s glowing reviews.

You don’t know if there’s sound logic, process or traditional wisdom behind the diet you’ve just signed up for. But you hope for the best and dive in anyway.

Well… I mean. You could do that.

You could see what happens.

When you have a complex health condition you have to have a lot more scrutiny in selecting the foods that you eat.

A complex health condition requires more thought and understanding than choosing a fad or named diet thinking it will solve everything for you.

You might do well on one of the diets listed above for a short time (6 weeks, or thereabouts.) You MAY see an improvement.

As the weeks and months go by you’ll notice that maybe you don’t feel so great after all.

Then, you go back to eating the way you ate prior to the fad-diet.

Or you try the next miracle diet (or supplement).

This is not a long-term solution.

Food should be the partner that allows you to feel like your best self.

What you eat should make sense.

It should be enjoyable and satisfying.

And you should feel good about and happy with what you eat, and how you feel after you eat!

Eating for complex health issues means your food, your diet, looks a bit different than everyone else’s.

No matter what health condition you have: you deserve to love your food, and have it love you back.

Let me show you how.

When you suffer from a complex, chronic and/or autoimmune health disorder, your digestive system is weak.

When your digestive system is weak it means you cannot break down the food you eat into usable parts:

Absorb-able nutrients. Energy. Blood. Minerals.

You could eat the best foods on earth, the healthiest foods available and still not be able to digest and assimilate it!

Developing a weak digestive system is shockingly easy, here are a few common practices that strain and weaken your digestive system:

  • Too many carbohydrates, as in: grains, starches, fruits, juices, sugars, etc.
  • Not enough carbohydrates.
  • Raw foods and juices.
  • Cleanses.
  • High fat diets (Yes, even the “good fats” can weaken your digestive system.)
  • Diets with the incorrect amount of protein suited to you.
  • Stressing out about what you are eating.
  • Having inconsistent eating habits.
  • Experimenting with endless elimination diets.
  • Overloading your system with supplements.

The takeaway is that most popular diets and approaches out there can ultimately do a disservice to you, your health condition and your digestive system.

No wonder figuring out what and how to eat is so darn confusing when you have a complex health condition!

When you have a complex health condition, you need something with a lot more nuance and balance than: don’t eat carbs, eat more carbs, eat more salads and raw vegetables, avoid carbs and eat more fat and protein.

You are what you eat, and digest, and assimilate.

There’s a lot of noise out there in the food world. It is really difficult to figure out what is real and what’s fluff.

You hope that something, anything, sticks and you feel better.

More like yourself again.

You miss the old you who was full of life.

I’ve spent nearly 20 years gathering experience cooking for complex health conditions.

Seven of those years I was a personal chef to a family with multiple food allergies. And, I have 12 years of clinical herbalist training and practice.

I started on this path because I got sick, and wasn’t getting better. I knew there was another way.

Because of my personal and professional experience, I have helped clients create some amazing wins:

Clients with a dizzying array of “unrelated symptoms” began to thrive and return to their beloved activities!

Hashimoto’s into remission.

Helped people live a life no longer ruled by IBS, migraines/headaches, cramps, and chronic pain.

The list goes on.

I’d love to help you too.

This approach to food is rooted in ancient herbal wisdom and traditions coupled with modern knowledge.

You’ll learn what foods work best for you AND how to prepare those foods.

No matter where you are on the continuum of a complex health issue, there is no better time to start than now.

In this cooking program you’ll learn:

  • How to cook simple and healing foods
  • Why a lot of the most common approaches don’t work, and can lead to harm, in the long-term
  • Why gluten and dairy are most often not part of this way of eating. (This is especially important information for those with autoimmune disorders.)
  • Develop a diet that is not complicated or confusing
  • How to prepare everything you need for a healthy diet – from broths, meat and eggs, to vegetables and sprouted grains, and beyond – in delicious and simple ways
  • How to bake satisfying, light and delicious desserts
  • What tools, appliances and gadgets you really need – and how to use them
  • How to plan your meals and weekly shopping lists to get the most bang for your nutritional and monetary buck
  • Scale recipes for your family (hint: it is a lot easier than you think!)
  • Don’t have a ton of time to research and food prep each week? Learn how to pack a ton of food prep into a few hours on the weekend.
  • What to keep in your pantry, fridge and freezer for healthy meals any day of the week.

Sure, you could learn all this stuff on your own for free…

But that takes time, and a lot of trial and error.

You run into roadblocks or get stuck, lose motivation.

You start trying random diets to see if anything sticks.

Why not set yourself up to succeed? And get healthier starting today?

I want to share my decades of dietary discovery with you, so you can be your best self.

If you want to learn how to cook solid meals and know that what you are eating is helping you live your best life, and be as well and healthy as possible, this is the program for you.

Is this right for me?

You’re open minded and willing to give this a shot.

This program is food and medicinal-diet based.
This program is not for you if you are vegetarian or vegan.

You will need a functional kitchen in order to succeed.
Think: stove, sink, counter, fridge, freezer, storage/pantry space, etc.

You don’t need to know how to cook Michelin-starred meals, or like an Old World grandmother, in order to to do this program.
You do need to want to learn how to feed yourself nourishing meals.

Additional supplies may be necessary for you to purchase.
I cannot predict what that may be, but you will learn in the first and second week how to set yourself up for success.

You need to have access to fresh and frozen foods (produce, meat, etc.)
While I take into consideration budgetary limitations (ie – not everyone is privileged to be able to buy organic grassfed regeneratively-farmed meats), you have to have the means to obtain the ingredients in the recipes provided.

This program is a minimum three-month commitment to eat according to your personalized diet (outlined in your 1:1 consultation with Pamela). This allows yourself and your body to create the changes needed for greater wellness to emerge.

After the three month period is up, you can choose work with me individually for next steps (at the follow-up session rate), or go on your own.

The more you put into the program, the more you’ll get out of it.

Q&A

Q: What if I don’t know how to cook?
A:This program is set up to teach you basic recipes each week starting the third week of the program.

With each technique provided, you’ll be walked through video instructions (I’ll be channeling Julia Child) so that you can see how things are done.

If you’re stuck, just give me a holler.

You’ll be given a list of recommended kitchen supplies if you don’t have a setup that you feel good about. And, if you have the money, there is a “nice to have, but not necessary” list for you too.

Q: I don’t know how to use a knife. They scare me.
A: No problem! I will be teaching you how to buy your first kitchen knife, and how to hold it so you can chop with ease and safety in mind. With time and with practice you’ll be chopping with ease!

Q: I have food allergies, will this program work with me on that?
A: Yes! We’ll discuss all in your 1:1 session with Pamela. While the recipes are gluten and dairy free, Pamela can work with you for additional substitutions or alternate recipes. Depending on the level of additional support needed, buying the 1:1 upgrade may be necessary.
